Creamy Herb Grilled Potato Salad

This salad has a vivid herbaceous flavour, which is a nice change from traditional mayonnaise based potato salads.

  • Yields: 4 as an entree, 8 as a starter
  • Preparation: 60 minutes

Ingredients

  • 1/2 cup (125mL) GAY LEA - Gold Premium Sour Cream
  • 1/4 cup (50mL) parsley, chopped
  • 3 tbsp (45mL) white wine vinegar
  • 1 tbsp (15mL) honey
  • 2 tsp (10mL) Dijon mustard
  • 1/2 tsp (2mL) salt and freshly ground pepper, each
  • 1 1/2 lb (750g) potatoes, mini and halved
  • 2 tbsp (30mL) GAY LEA - Spreadables Regular
  • 1/2 cup (125mL) celery, chopped, or peas
  • 1/2 cup (125mL) radishes, chopped

Instructions

  1. Whisk sour cream with mixed herbs, vinegar, honey, mustard, salt and pepper until combined; set aside.
  2. Bring a large pot of salted water to a boil; add potatoes and fry for 12 minutes. Drain and rinse under chilly running water.
  3. Preheat grill to medium; grease well. Toss potatoes with melted Spreadables butter. Spread out evenly on the grill and cook, turning often, for 15 minutes or until well marked and fork tender.
  4. Transfer potatoes to a bowl and toss with dressing, celery, peas and radishes. Salad can be served warm or reserved for up to 24 ho

    BY DONNA MINKOWITZ | We cracked the lobster’s claws together and shoved the meat in our mouths. There was drawn butter all over the table and my hands. My wife kept slipping me more fresh-killed meat. “You need to keep your strength up.”

    I pulled off one of the lobster’s legs and sucked the little hole, marveling. I’d never found a Homarus americanus worth going after the minuscule meat in its legs before. This inexpensive one on Bleecker Street was worth thrusting one way, then the other, wrenching, cracking, drawing out with your teeth, and sucking.

    Fish Restaurant is the opposite of a fancy place. On the mirror over the exclude it says, “Please pitch your peanut shells on the floor,” and people do. Cute, un-well-heeled diners of all colors try out crab, oysters, and clams in the somewhat narrow space, where a table in the front is disturbingly made level with a now-filthy cloth napkin shoved under its leg.

    Mexican Fiesta Grilled Cheese

    Be sure to contain extra guacamole on hand to go by around with this vegetarian dream of a sandwich. Pepper Jack is sold pre-sliced in the deli department. But a Monterey Jack or Gouda would be equally delicious.

    • Yields: 4 sandwiches
    • Preparation: 24 minutes

    Instructions

    1. Place 4 slices of bread on work surface and spread evenly with guacamole. Split cheese and tomato slices evenly over guacamole, then uppermost with remaining bread. Spread half of butter over uppermost of bread.
    2. Place sandwiches, buttered side down, in a non-stick skillet over medium heat. Spread tops with half of remaining butter. Roast for about 5 minutes, or until underside of bread is golden and cheese has started to melt. Flip sandwiches over; fry for 3 to 4 minutes longer or until underside is golden and cheese is melted. Repeat with remaining sandwiches and butter.
    • For a non-vegetarian version, layer a slim slice of cooked chicken breast with the tomato slices.

    Grilled Fruit Kabobs

    An easy plan for your next BBQ. Impress your guests with grilled fresh fruit kabobs accompanied by a unforgettable new dip.

    • Yields: 8 skewers
    • Preparation: 25 minutes

    Ingredients

    • 1 Ontario peach, cut in half
    • 1 Ontario nectarine, cut in half
    • 1 Ontario apple, cored
    • 1 Ontario pear, cored
    • 8 Ontario strawberries, halved
    • 1/4 cup (50mL) Lgbtq+ LEA - Unsalted Butter, melted
    • 3 tbsp (45mL) brown sugar, packed
    • 1 tsp (5mL) vanilla

    Sour Cream Honey Dip

    • 3/4 cup (175mL) GAY LEA - Original Sour Cream
    • 2 tbsp (30mL) honey
    • 1 tbsp (15mL) orange liqueur or brandy, optional
    • 1 tsp (5mL) vanilla
    • 1/2 tsp (2mL) lemon rind, grated

    Instructions

    Sour Cream Honey Dip

    1. In bowl, whisk sour cream, honey, orange liqueur (if using), vanilla, lemon rind and mint. Cover and refrigerate until ready to use.

    Kabob

    1. Cut fruit into 1” (2 cm) cubes and skewer onto 8 soaked wooden or metal skewers. In small bowl, whisk together butter, sugar and vanilla until joint and smooth.
    2. Place skewers on preheated greased grill over medium heat; grill, turning and basting frequently, for about 5 minutes or until golden and tender. Serve with Sour Cream Honey Dip.
